I have long had a secret wish to own a restaurant but John Bishop of Bishops Restaurant in Vancouver used to warn me against such a move. So next best thing was to imagine I had one! To do this I came up with various names – The Red Barons Hideaway Restaurant when I was flying in northern Alberta and more recently The Nutmeg Restaurant and Retreat. I love nutmeg and use it frequently in most of my cooking.
I have also marvelled at better waiters who manage to recite a menu, take the food orders and cater to the individual special requests of their guests… committing it all to memory. I often ask myself “how they do that.”
